I love cashews as a healthy yet filling snack. Raw cashews are perfect because they are super versatile – you can use them to make vegan cheeses, curry sauces, or roast them with any combination of seasonings and spices that tickle your fancy. Cashews are a great source of protein and healthy fat – plus they satisfy my cravings for a crunchy snack!
This recipe is a lovely combination of savory and sweet, along with the warm flavors of curry, cumin, and ginger. It’s really easy to make – all you do is whisk the spices, coat the cashews, and bake.
I try to use all organic ingredients when possible, so I know that it’s as clean as possible.
I want to experiment with different spice combinations but this one is so addicting, I keep coming back to it!
- 1 cup raw cashews
- 2 tsp. pure maple syrup
- 1/2 tsp. extra virgin olive oil
- 1 tsp. curry powder
- 1/4 tsp. ground cumin
- 1/4 tsp. ground ginger
- 1/8 tsp. fine sea salt
- Preheat oven to 325° F.
- Line a baking sheet with parchment paper.
- Whisk all ingredients (besides the cashews) in a medium bowl.
- Add cashews and stir until evenly coated.
- Bake approximately 15 minutes, stirring once.
